Step-by-Step Instructions for Fig and Goat Cheese Pizza
- Prepare the rustic pizza dough. If using store-bought, drizzle with 1 tablespoon of olive oil, divide into 6 to 8 balls and proof in a warm place for about 2 hours until doubled.

- Whip the goat cheese in a food processor with 2 tablespoons of olive oil and a pinch of sea salt until smooth. Fold in chopped chives and refrigerate.

- Caramelize the onions in a large pan over medium-low heat with a tablespoon of olive oil for about 25-30 minutes until golden brown.

- On a floured surface, roll out each piece of proofed dough into a round shape, about 6-8 inches in diameter.

- Preheat a cast-iron griddle over medium-high heat. Grill each side of the rolled-out dough for about 1 minute until it bubbles.

- Place grilled crusts onto a broiler-proof tray, spread whipped goat cheese, and sprinkle caramelized onions and sliced figs on top.

- Preheat your broiler, then place the tray under it for about 1 minute until the toppings are golden and bubbly.

- Remove from the broiler, garnish with fresh herbs or arugula and serve immediately.
