- In a large mixing bowl, combine old-fashioned rolled oats, peanut butter, and honey. Stir until well blended.
- Gently fold in butterscotch chips and chopped walnuts to ensure even distribution.
- Cover the bowl and place it in the refrigerator for 1 hour to chill.
- After chilling, roll the mixture into balls about 1 tablespoon each.
- Line a baking sheet with parchment paper and place the rolled balls on it with space in between.
- Refrigerate for another 30 minutes to set before storing.
