  1. Preheat your oven to 350°F (175°C) and line a baking sheet with lightly greased parchment paper.
  2. In a large non-stick skillet, combine water, granulated sugar, and your chosen spices. Heat over medium-high until boiling and sugar is dissolved.
  3. Reduce the heat to low and add almonds and vanilla extract. Stir continuously until each almond is coated with the spiced syrup.
  4. Continue stirring over low heat for about 10–15 minutes until water evaporates and sugar crystals form a sandy texture around the almonds.
  5. Pour the mixture onto the prepared baking sheet and spread almonds into a single layer. Let them cool fully on the baking sheet.
