For the Salad
  • 1 head Little Gem Lettuce or any leafy greens
  • 2 cups Tomatoes large or cherry varieties

For the Tofu
  • 14 ounces Extra-Firm Tofu avoid silken tofu
  • 2 tablespoons Olive Oil or avocado oil
  • 2 tablespoons Lemon Juice or vinegar
  • 1 tablespoon Honey or maple syrup for vegan option
  • 2 tablespoons Shawarma Spice Mix contains cumin, smoked paprika, turmeric, oregano, cayenne, salt, black pepper, ground ginger
  • 3 cloves Garlic (minced) or garlic powder as an alternative
  • 2 tablespoons Corn Flour or any flour for crispness
For the Crisp
  • 2 tablespoons Corn Flour or regular/gluten-free flour

Method
 

Step-by-Step Instructions
  1. Prepare the tofu by patting it dry with paper towels to remove excess moisture and slice it into thin pieces.
  2. Arrange sliced tofu pieces on a baking sheet lined with parchment paper and preheat your oven to 180°C (356°F).
  3. Mix olive oil, lemon juice, honey, and shawarma spice mix in a bowl until fully blended; adjust consistency with water if needed.
  4. Coat each tofu slice with the shawarma marinade, ensuring all sides are covered and allow to marinate briefly.
  5. Bake the marinated tofu slices for 15-20 minutes, flipping halfway through until edges are crispy and golden brown.
  6. Assemble your shawarma by laying out flatbreads, adding lettuce, tomatoes, cucumber, and baked tofu, then drizzle with tzatziki.
  7. Serve wrapped or open-faced and enjoy your delicious Tofu Shawarma!
