Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Slice the eggplants lengthwise into strips about 1/4 inch thick. Arrange on the baking sheets, brush with olive oil, and season with salt and pepper. Roast for 20-25 minutes.
  3. In a mixing bowl, combine ricotta, mozzarella, parmesan, egg, minced garlic, and parsley. Mix well and season with salt and pepper.
  4. Spread marinara sauce on the bottom of a baking dish. Take one eggplant slice, place 1-2 tablespoons of filling on the end, roll tightly, and place seam-side down in the dish.
  5. Cover the rollatini with marinara sauce and sprinkle with Italian seasoning and remaining cheeses. Bake for 30-35 minutes at 375°F (190°C) until bubbly.
  6. Allow the dish to rest for 5-10 minutes before slicing.
