  • 1 medium Onion chopped, yellow or red
  • 2 cloves Garlic minced
  • 0.5 tsp Kosher Salt
  • 0.5 tsp Black Pepper
  • 1 tbsp Lemon Juice
  • 0.5 cups Goat Cheese cream or feta
  • 1.5 cups Feta Cheese
  • 0.5 cups Cheddar Cheese grated
  • 1 large Egg for binding
  • 1 cups Parsley chopped
  • 0.5 cups Pine Nuts toasted
  • 0.125 tsp Nutmeg pinch
For the Pastry
  • 16 sheets Filo Pastry 304 g
  • 0.5 cups Olive Oil or melted butter

Method
 

Step-by-Step Instructions for Flaky Spanakopita Spiral
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, sauté the chopped onion and minced garlic in olive oil for 3-4 minutes.
  3. Add the thawed and drained spinach to the skillet and cook for an additional 3-5 minutes.
  4. In a mixing bowl, combine sautéed spinach, feta, goat cheese, cheddar, parsley, egg, nutmeg, salt, and pepper.
  5. Brush the bottom of a baking dish with olive oil and layer two sheets of phyllo dough, brushing oil between each layer.
  6. Spread the filling over the phyllo layers, then roll into a spiral shape.
  7. Brush the top of the spiral with olive oil and bake for 25-30 minutes until golden brown.
  8. Allow the spanakopita to cool for 5-10 minutes before slicing and serving.
