  2. Drain excess liquid from full-fat cottage cheese and blend until smooth.
  3. Whisk egg whites and cream of tartar using an electric mixer until stiff peaks form.
  4. In a separate bowl, combine egg yolks, blended cottage cheese, cornstarch, sweetener, vanilla extract, and lemon zest until smooth.
  5. Gently fold the yolk-cottage cheese mixture into the whipped egg whites.
  6. Fold in fresh blueberries carefully to avoid crushing them.
  7. Scoop mounds of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 25-30 minutes until golden brown and set in the center.
  9. Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
