Method
 

Step-by-Step Instructions
  1. Shred about 2 cups of cooked chicken and finely dice 1/4 cup of red onion. Soak onion in cold water for 10 minutes to mellow its flavor, then drain.
  2. In a mixing bowl, combine shredded chicken, drained red onion, 1/4 cup cilantro, and 1 cubed avocado. Mash avocado and mix until well incorporated.
  3. Blend together 1/2 cup cottage cheese, 1/4 cup mayonnaise, 1 teaspoon onion powder, and juice of 1 lime until smooth. Fold into chicken mixture.
  4. Wash 2 English cucumbers and slice into 1/8-inch thick rounds. Pat dry to remove excess moisture.
  5. Spread whipped cream cheese onto each cucumber slice, then add chicken salad filling. Optionally, sprinkle additional diced onion and avocado.
  6. Roll each cucumber slice tightly from the wider side. Slice each roll diagonally for serving.
  7. Sprinkle with Everything Bagel seasoning before serving. Enjoy!
