- Shred about 2 cups of cooked chicken and finely dice 1/4 cup of red onion. Soak onion in cold water for 10 minutes to mellow its flavor, then drain.
- In a mixing bowl, combine shredded chicken, drained red onion, 1/4 cup cilantro, and 1 cubed avocado. Mash avocado and mix until well incorporated.
- Blend together 1/2 cup cottage cheese, 1/4 cup mayonnaise, 1 teaspoon onion powder, and juice of 1 lime until smooth. Fold into chicken mixture.
- Wash 2 English cucumbers and slice into 1/8-inch thick rounds. Pat dry to remove excess moisture.
- Spread whipped cream cheese onto each cucumber slice, then add chicken salad filling. Optionally, sprinkle additional diced onion and avocado.
- Roll each cucumber slice tightly from the wider side. Slice each roll diagonally for serving.
