Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and equipment.
  2. Unroll the thawed sheet of puff pastry onto parchment paper and spread the fig preserves evenly over it.
  3. Sprinkle the crumbled goat cheese over the fig preserves, then add the light brown sugar and fresh thyme.
  4. Roll the puff pastry tightly from one end to the other, wrap it in parchment paper, and freeze for 20 minutes.
  5. Slice the log into ½ inch thick pinwheels and arrange them on a lined baking sheet.
  6. Beat the egg and brush it over the tops of the pinwheels before baking.
  7. Bake for 15-20 minutes until golden brown and flaky.
  8. Allow to cool and garnish with extra brown sugar and thyme before serving.
