For the Pizza
  • 1 pound Prepared Pizza Dough store-bought for convenience or homemade
  • 1 cup Shredded Mozzarella Cheese can be substituted with dairy-free cheese for vegan option
  • 1 cup Cooked Chorizo swap for ground turkey or vegetarian sausage for variety
  • 1/2 cup Sour Cream Greek yogurt is a healthier alternative
  • 1/4 cup Reserved Cilantro Leaves for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (230°C).
  2. Prepare your pizza dough by letting it sit at room temperature for about 15 minutes.
  3. In a blender, combine cilantro, lime juice, jalapeño, kosher salt, pine nuts, cotija cheese, and olive oil. Blend until smooth.
  4. Cook the chorizo in a skillet over medium heat for 5-7 minutes until browned.
  5. Grease a 9'x12' sheet pan with olive oil and dust with flour.
  6. Roll out the pizza dough into a rectangle and place it in the prepared sheet pan.
  7. Spread the cilantro pesto over the rolled-out dough, then add shredded mozzarella and sautéed chorizo.
  8. Bake the pizza in the oven for 10-14 minutes until the crust is golden.
  9. Cool for a couple of minutes before slicing.
  10. Garnish with sour cream, additional cotija, and cilantro leaves before serving.
