Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a large pot over medium heat.
  2. Melt a tablespoon of butter in the preheated pot and sauté diced onions for about 5 minutes until translucent.
  3. Mix in cream of mushroom soup, milk, sour cream, garlic salt, salt, mustard powder, Italian seasoning, and pepper until smooth.
  4. Stir in 1 cup of shredded cheddar cheese until melted and combined into the sauce.
  5. Fold in frozen broccoli and mixed vegetables, stirring for 2-3 minutes until heated through.
  6. Remove from heat, stir in whisked eggs and cooked rice until fully combined.
  7. Grease a casserole dish, pour the vegetable mixture inside, and sprinkle remaining shredded cheese on top.
  8. Cover the dish with foil and bake for 20 minutes.
  9. Prepare the topping by mixing crushed Ritz crackers with melted butter.
