Preparation
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, whisk together all-purpose flour, baking powder, baking soda, sugar, salt, and spices.
- Cut the cold butter into small pieces and mix it into the dry mixture until coarse crumbs form.
- Fold in the grated apple evenly throughout the dough.
- Slowly pour in the chilled buttermilk, folding it into the dough until it's sticky.
- Lightly dust a clean surface with flour and turn the sticky dough out onto it.
- Knead the dough briefly to form a cohesive mass and pat it into a rectangle about 1 inch thick. Fold short sides towards the middle and flatten gently, repeating this process seven times.
- Use a biscuit cutter to cut out rounds from the dough and place them on a greased baking sheet.
- Bake for about 20 minutes until golden brown and aromatic.
- Melt the unsalted butter in a saucepan over low heat, stir in honey and pinch of salt to create the glaze.
- Brush the warm biscuits with the honey butter glaze once cooled slightly.
