Ingredients
  

For the Biscuits
  • 2 cups All-Purpose Flour or gluten-free all-purpose flour
  • 1 tbsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp Sugar can substitute with brown sugar
  • 1 tsp Salt
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Ground Cardamom
  • 1/4 tsp Ground Cloves can substitute with apple pie spice
  • 1 cup Butter cold, for best texture
  • 1/2 cup Grated Apple use your favorite variety
  • 1 cup Buttermilk chilled, or mix milk with vinegar/lemon juice
For the Honey Butter Glaze
  • 3 tbsp Unsalted Butter chilled
  • 3 tbsp Honey maple syrup is a good alternative
  • pinch Salt to enhance glaze sweetness

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, whisk together all-purpose flour, baking powder, baking soda, sugar, salt, and spices.
  3. Cut the cold butter into small pieces and mix it into the dry mixture until coarse crumbs form.
  4. Fold in the grated apple evenly throughout the dough.
  5. Slowly pour in the chilled buttermilk, folding it into the dough until it's sticky.
  6. Lightly dust a clean surface with flour and turn the sticky dough out onto it.
  7. Knead the dough briefly to form a cohesive mass and pat it into a rectangle about 1 inch thick. Fold short sides towards the middle and flatten gently, repeating this process seven times.
  8. Use a biscuit cutter to cut out rounds from the dough and place them on a greased baking sheet.
  9. Bake for about 20 minutes until golden brown and aromatic.
  10. Melt the unsalted butter in a saucepan over low heat, stir in honey and pinch of salt to create the glaze.
  11. Brush the warm biscuits with the honey butter glaze once cooled slightly.
