Method
 

Cooking Instructions
  1. Preheat your waffle iron to medium heat for about 5 minutes.
  2. In a mixing bowl, whisk together flour, baking powder, cinnamon, and salt until combined.
  3. Blend eggs, milk, melted butter, applesauce, vanilla extract, and spinach in a blender until smooth.
  4. Pour blended mixture into the bowl of dry ingredients and stir until just combined.
  5. Spray waffle iron with non-stick spray and pour 1/4 cup of batter onto it. Cook for 3-5 minutes until golden brown.
  6. Serve immediately with maple syrup, fresh fruit, or yogurt, or store in an airtight container.
