  • 1 clove Garlic half used for topping
For the Bread
  • 1 loaf Ciabatta or any rustic bread
For Garnishing
  • Black Pepper to taste
  • Lemon Zest for brightness

Method
 

Preparation Steps
  1. Combine defrosted frozen peas, optional pea shoots, grated parmesan, olive oil, lemon juice, and half a garlic clove in a food processor. Blend until roughly combined, maintaining some texture.
  2. Preheat broiler to high and line a baking sheet with foil. Slice ciabatta into thick pieces, drizzle with olive oil, and broil for 2-3 minutes on each side until golden brown.
  3. Rub the toasted ciabatta slices with the remaining half of the garlic clove while still warm to infuse flavor.
  4. Spread a generous layer of the pea topping on each slice of ciabatta. Sprinkle with extra grated parmesan, lemon zest, and remaining pea shoots.
  5. Drizzle with extra virgin olive oil and sprinkle black pepper on top. Serve immediately.
