- Preheat the oven to 350°F. 
- Press the sugar cookie dough into a 12-inch round pizza pan or a baking sheet to form a crust. 
- Bake for 12-15 minutes or until golden brown. Let it cool completely. 
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy. 
- Gently fold in the whipped topping until well combined. 
- Spread the cream cheese mixture evenly over the cooled cookie crust. 
- Arrange the sliced strawberries, blueberries, kiwi, and mandarin oranges on top of the cream cheese layer in a decorative pattern. 
- If using, heat the apricot preserves in a small saucepan until melted. Brush the melted preserves over the fruit for a shiny glaze. 
- Refrigerate the fruit pizza for at least 1 hour before slicing to allow the flavors to meld. 
- Cut into wedges and serve chilled.
