For the Binding and Texture
  • 2 tbsp Olive Oil, divided or swap for melted butter
  • 1/2 cup Breadcrumbs, panko or regular or gluten-free breadcrumbs
  • 1/4 cup Parmesan Cheese, grated or nutritional yeast for vegan
Seasonings
  • Salt to taste
  • Black Pepper to taste
  • Optional Garnish: Smoked Paprika or Extra Herbs

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Clean the mushrooms with a damp cloth and remove the stems, chopping them finely.
  2. In a skillet, heat 1 tbsp of olive oil. Add chopped mushroom stems, onion, and garlic. Sauté for about 5 minutes until soft.
  3. In a mixing bowl, combine sautéed mixture with breadcrumbs, Parmesan cheese, parsley, thyme, salt, pepper, and remaining olive oil. Mix until well blended.
  4. Stuff each mushroom cap with the filling, packing it tightly. Arrange on a lined baking sheet.
  5. Bake for 18 to 20 minutes until mushrooms are tender and tops are browned.
  6. Let cool slightly, garnish if desired, and serve warm.
