- Prep ingredients by washing and chopping the Yukon gold or red potatoes and carrots into bite-sized pieces. Mince several cloves of garlic and season the chicken with salt and pepper.
- Combine the seasoned chicken at the bottom of the slow cooker, followed by the chopped potatoes and carrots. Sprinkle the minced garlic over the top and pour melted butter evenly over the contents.
- Cover the slow cooker and set to cook on LOW for 6 hours or HIGH for 3-4 hours without lifting the lid.
- Once finished, remove the lid and let the dish sit for about 10 minutes before serving.
