Ingredients

For the Cod
  • 4 fillets Cod Fresh fillets are key; look for shiny, firm pieces.
  • 1/4 cup Soy Sauce Opt for light soy sauce for a milder flavor.
  • 2 tablespoons Honey Natural sweetness; maple syrup can be used for a vegan alternative.
  • 2 tablespoons Rice Vinegar Brightens the flavor; white vinegar is a substitute.
  • 1 tablespoon Fresh Ginger Use grated for a spicy warmth.
  • 2 cloves Garlic Minced enhances aroma and depth.
  • 1 tablespoon Sesame Oil Provides a nutty flavor; optional.
For the Garnish
  • 2 scallions Green Onions Sliced for freshness.
  • 1 tablespoon Sesame Seeds Toasted for flavor.
  • 1/4 cup Fresh Cilantro Chopped; optional.
  • 2 wedges Lime For serving on the side.

Equipment

  • shallow dish
  • small saucepan
  • oven
  • skillet
  • Grill

Method

Preparation Steps
  1. In a shallow dish, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil until well blended. Add the cod fillets, ensuring they are thoroughly coated in the marinade. Cover the dish tightly and refrigerate for at least 30 minutes, or up to 1 hour for deeper flavor.
  2. While the cod is marinating, pour the leftover marinade into a small saucepan. Heat over medium heat, bringing it to a gentle simmer. Stir occasionally for about 5–7 minutes until the marinade reduces and thickens into a syrupy glaze.
  3. Choose your cooking method for the cod. For baking, preheat the oven to 400°F (200°C). Bake for 10-15 minutes until the fish flakes easily. For pan-searing or grilling, cook for approximately 3-4 minutes per side.
  4. Once cooked, remove the cod from heat and brush the thickened glaze over each piece. Serve immediately, garnished with sliced green onions, toasted sesame seeds, and fresh cilantro.
