- In a medium saucepan, combine water, honey or maple syrup, molasses, sliced ginger, and cinnamon sticks. Bring to a gentle boil over medium heat, stirring occasionally, then simmer for 3-5 minutes. Stir in vanilla extract and let cool before straining.
- Prepare your rocks glass by optionally rimming with cinnamon sugar. Dip the rim into the gingerbread syrup and then into cinnamon sugar.
- Fill the prepared glass with ice cubes. Pour in vodka, coffee liqueur, and gingerbread syrup. Stir gently with a bar spoon.
- Layer cream on top by slowly pouring it over the back of a spoon to create a layered effect.
- Garnish with a sprinkle of ground cinnamon and a mini gingerbread cookie. Serve and enjoy!
