Step-by-Step Instructions
  1. Prepare Lobster: Remove the meat from the lobster tails and chop into bite-sized chunks. Reserve the shells for stock.
  2. Make Lobster Stock: Heat olive oil, sauté lobster shells, add vegetables, tomato paste, water, and spices. Simmer for 1 hour before straining.
  3. Cook Lobster: Melt butter in a skillet, add lobster meat, and cook until opaque. Set aside.
  4. Prepare Sauce: Sauté shallot and garlic, add cherry tomatoes and cook until they burst. Deglaze with wine, add stock and cream. Simmer.
  5. Cook Pasta: Boil linguine, cook until al dente, reserve pasta water, drain.
  6. Combine: Toss drained linguine with sauce and lobster, adjust with reserved pasta water.
  7. Serve: Garnish with parsley, serve immediately.
