Ingredients
  

  • 2 large boneless skinless chicken breasts (about 1 pound total)
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cooked brown rice or quinoa
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried parsley

Method
 

  1. Preheat your grill or grill pan to medium-high heat.
  2. In a small bowl, mix together olive oil, garlic powder, onion powder, salt, and pepper. Brush this mixture over the chicken breasts.
  3. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes before slicing.
  4. While the chicken is resting, steam the broccoli florets until tender, about 5 minutes.
  5. In a separate bowl, combine Greek yogurt, mayonnaise, minced garlic, lemon juice, and dried parsley. Mix until smooth to create the creamy garlic sauce.
  6. To assemble the bowls, start with a base of cooked brown rice, add sliced grilled chicken and steamed broccoli, and drizzle with the creamy garlic sauce.
  7. Sprinkle grated Parmesan cheese on top before serving.
