- Preheat your oven to 200°C (390°F).
- In a large skillet, heat vegetable oil over medium-high heat. Add minced beef and cook for about 5–7 minutes until browned.
- Reduce heat to medium and sauté chopped large white onion for about 4–5 minutes until translucent, then add minced garlic and sauté for another minute.
- Sprinkle all-purpose flour over the sautéed onions and garlic, stir, and cook for another minute. Gradually pour in Guinness stout, stirring for about 2–3 minutes until thickened.
- Return the browned minced beef to the skillet, pour in beef stock and add tomato paste. Stir and sprinkle in dried thyme. Simmer for about 45 minutes.
- Transfer the filling to a pie dish, roll out puff pastry on a floured surface, cover the filling, and seal edges tightly.
- Brush the surface of the pastry with beaten egg for a golden finish. If vegan, score the top lightly to allow steam to escape.
- Bake in the preheated oven for about 30 minutes or until the pastry is puffed and golden brown.
- Let it cool for about 10 minutes before slicing and serving.
