Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 200°C (390°F).
  2. In a large skillet, heat vegetable oil over medium-high heat. Add minced beef and cook for about 5–7 minutes until browned.
  3. Reduce heat to medium and sauté chopped large white onion for about 4–5 minutes until translucent, then add minced garlic and sauté for another minute.
  4. Sprinkle all-purpose flour over the sautéed onions and garlic, stir, and cook for another minute. Gradually pour in Guinness stout, stirring for about 2–3 minutes until thickened.
  5. Return the browned minced beef to the skillet, pour in beef stock and add tomato paste. Stir and sprinkle in dried thyme. Simmer for about 45 minutes.
  6. Transfer the filling to a pie dish, roll out puff pastry on a floured surface, cover the filling, and seal edges tightly.
  7. Brush the surface of the pastry with beaten egg for a golden finish. If vegan, score the top lightly to allow steam to escape.
  8. Bake in the preheated oven for about 30 minutes or until the pastry is puffed and golden brown.
  9. Let it cool for about 10 minutes before slicing and serving.
