Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 cup pineapple chunks fresh or canned
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 medium red onion sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Cooked rice for serving (optional)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the soy sauce, honey, olive oil, garlic powder, ground ginger, salt, and pepper. Whisk until well blended.
  3. Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Let it marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. On a large baking sheet, arrange the marinated chicken thighs in the center. Surround them with the pineapple chunks, sliced bell peppers, and red onion.
  5. Drizzle any remaining marinade over the vegetables and chicken.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Serve hot over cooked rice if desired, and enjoy your meal!
