- Preheat your oven to 400°F (200°C). 
- In a large bowl, combine the soy sauce, honey, olive oil, garlic powder, ground ginger, salt, and pepper. Whisk until well blended. 
- Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Let it marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor). 
- On a large baking sheet, arrange the marinated chicken thighs in the center. Surround them with the pineapple chunks, sliced bell peppers, and red onion. 
- Drizzle any remaining marinade over the vegetables and chicken. 
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). 
- Serve hot over cooked rice if desired, and enjoy your meal!
