Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, add rolled oats, mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and salt. Stir until evenly mixed.
  3. In a small saucepan over low heat, combine peanut butter with honey. Stir until smooth, about 2-3 minutes. Remove from heat, add vanilla extract, and mix well.
  4. Pour the warm peanut butter mixture over the dry ingredients. Mix thoroughly until all are well coated.
  5. Form small balls of cookie dough and place them on the prepared baking sheet, flattening each ball about half an inch thick.
  6. Bake for 12-15 minutes until golden brown and firm to the touch.
  7. Remove the cookies from the oven and cool on a wire rack for at least 10 minutes before enjoying.
