Preparation Steps
- Preheat your oven to 375°F (190°C).
- Grease a medium-sized baking dish with olive oil or cooking spray.
- Combine cottage cheese with broccoli florets, chopped bell pepper, diced zucchini, halved cherry tomatoes, fresh spinach, and sliced red onion in a large mixing bowl.
- Whisk together the eggs, olive oil, garlic powder, onion powder, black pepper, salt, and dried oregano in a separate medium bowl until smooth.
- Pour the egg mixture over the combined vegetables and stir vigorously until thoroughly coated.
- Evenly spread the veggie and egg mixture into your greased baking dish.
- Sprinkle the shredded mozzarella cheese generously over the top of the vegetable mixture.
- Place the baking dish into the preheated oven and bake for 30–35 minutes until the cheese is bubbly and golden brown.
- Remove from oven and allow it to cool slightly for about 10 minutes before slicing and serving warm.
