Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and lightly grease a 9-inch springform pan.
  2. Press the refrigerated sugar cookie dough evenly into the bottom of the prepared springform pan and bake for 10 minutes.
  3. In a large mixing bowl, beat together the softened cream cheese and granulated sugar until smooth, then add eggs one at a time, followed by sour cream, vanilla, and almond extract.
  4. Pour the cheesecake filling over the cooled sugar cookie crust and bake for 55–65 minutes until the center is almost set.
  5. Allow cheesecake to cool at room temperature for 30 minutes, then refrigerate for at least 4 hours or overnight.
  6. Top with whipped cream, Christmas sprinkles, and crushed sugar cookies before serving.
