Ingredients
  

  • 2 pounds chicken thighs bone-in and skin-on
  • 1 cup honey
  • 1 cup BBQ sauce
  • 2 pounds baby potatoes halved
  • 4 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together honey and BBQ sauce until well combined. Add the chicken thighs and coat them thoroughly in the mixture. Let them marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).
  3. While the chicken is marinating, prepare the potatoes. In a separate bowl, toss the halved baby potatoes with olive oil, minced garlic, salt, and black pepper until evenly coated.
  4. Spread the potatoes in a single layer on a large baking sheet. Bake in the preheated oven for 20 minutes.
  5. After 20 minutes, remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the potatoes.
  6. Place the marinated chicken thighs on the same baking sheet with the potatoes. Return to the oven and bake for an additional 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Once done, remove from the oven and let rest for 5 minutes. Garnish with fresh parsley before serving.
