Ingredients

For the Glaze
  • ½ cup local raw honey recommended for a robust flavor
  • ½ cup light brown sugar firmly packed
  • 2 tbsp Dijon mustard for a sharp, tangy flavor
  • 1 tbsp whole-grain mustard adds texture and complexity
  • 2 tsp apple cider vinegar to brighten flavor
  • 1 tsp kosher salt to elevate taste
  • ½ tsp freshly ground black pepper adds a hint of heat
  • ½ tsp ground cinnamon adds warmth
  • tsp ground cloves optional; use sparingly
For the Ham
  • 8-10 lbs fully cooked bone-in spiral ham

Equipment

  • oven
  • roasting pan
  • small saucepan
  • Basting Brush

Method

Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C). Remove the ham from its packaging and discard any glaze packet. Place the ham cut-side down on a wire rack in a roasting pan.
  2. In a saucepan over medium-low heat, combine all glaze ingredients and whisk until the sugar dissolves, about 3 minutes. Reserve some for serving later.
  3. Tent the ham with aluminum foil and bake for 60 minutes or until the internal temperature reaches 120°F. Remove foil for the last 15 minutes.
  4. Use a basting brush to apply half of the glaze on the ham's surface, then bake uncovered for 10 minutes. Brush on the rest and bake for another 5 minutes.
  5. Let the ham rest for 10 minutes before carving to allow juices to redistribute. Serve with reserved glaze.
