Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Slice the large green cabbage into six ¾ inch thick rounds and lay them flat on the prepared baking sheet.
  3. Brush each cabbage steak generously with olive oil, seasoning them with salt and pepper.
  4. Roast the cabbage steaks for 15-20 minutes until the edges are golden brown and crispy.
  5. While the cabbage roasts, shred the Dubliner cheese, chop the scallions, and slice the corned beef into ribbons.
  6. After roasting, brush each steak with spicy whole grain mustard and layer the corned beef and cheese on top.
