Step-by-Step Instructions
  1. Prepare the crust by combining graham cracker crumbs, sugar, and melted butter in a medium mixing bowl until it resembles wet sand. Press firmly into the bottom of a lined 8x8-inch baking pan.
  2. In a large mixing bowl, beat cream cheese and sugar together using an electric mixer until smooth, then gradually add eggs and mix well. Fold in ricotta cheese and mini chocolate chips.
  3. Pour the filling over the prepared crust and bake at 325°F (160°C) for 40-45 minutes until edges are set and center jiggles slightly.
  4. Cool at room temperature for 1 hour, then refrigerate for at least 4 hours to let flavors meld.
  5. Serve chilled, dusting lightly with powdered sugar and garnishing with extra mini chocolate chips or sprinkle of orange zest.
