Method
 

Step-by-Step Instructions
  1. Melt butter in a large saucepan over medium-high heat. Add chopped onion and mushrooms, sauté covered for 2-4 minutes until onions are translucent and mushrooms soften.
  2. Remove lid, cook for 6-7 minutes, stirring occasionally until mushrooms are browned. Add water if necessary to deglaze.
  3. Pour in Marsala wine, reduce for 3-5 minutes until almost dry.
  4. Sprinkle flour over the mixture and stir for 1-2 minutes to cook off raw taste.
  5. Slowly pour in chicken stock while stirring. Add herbs, bring to a boil, then simmer for 10-15 minutes.
  6. Add Brie and cream cheese, stirring until melted. Then stir in heavy cream.
  7. Pour in reserved Marsala wine, season with salt to taste, and simmer for 2-3 minutes.
  8. Ladle into bowls and garnish with optional slivers of Brie rind, herbs, or sautéed mushrooms.
