- Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick cooking spray.
- In a skillet, heat a drizzle of olive oil and sauté diced onion for about 5 minutes until soft.
- In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, and pepper, then half of the grated Parmesan.
- Transfer the mixture to the baking dish, shaping it into a loaf with a smooth top.
- Sprinkle the remaining grated Parmesan on top, adding paprika or Italian seasoning if desired.
- Bake in the preheated oven for 45–50 minutes, using a meat thermometer to check for 165°F (74°C) doneness.
