- Prepare the Dough: Allow refrigerated pie crusts to come to room temperature for 10-15 minutes, then unroll.
- Cut Out Dough Circles: Cut circles from the dough using a 3-inch cookie cutter, aiming for about 12 circles.
- Make the Filling: Combine chopped chocolate bars, miniature marshmallows, and half of the crushed graham crackers in a bowl.
- Assemble the Pies: Spoon one tablespoon of filling onto half of the dough circles, moisten edges with water.
- Seal and Crimp: Place another dough circle on top of each filled circle and crimp edges with a fork.
- Add Finishing Touches: Brush tops with melted salted butter and sprinkle with remaining graham cracker crumbs.
