- Preheat your oven to 350°F (175°C) and prepare an 8x8 baking dish by lining it with parchment paper and lightly greasing it.
- In a mixing bowl, combine the softened unsalted butter and brown sugar. Beat on medium speed for about 2 minutes until light and fluffy.
- Add the large egg, vanilla extract, and fine salt to the mixture. Mix carefully until well combined.
- Gradually add the all-purpose flour while your mixer is on low speed and mix just until combined. Gently fold in the mashed overripe bananas.
- Fold in 3/4 cup of chocolate chips into the batter, reserving some for the topping if desired.
- Pour the batter into the prepared baking dish, smoothing the top with a spatula. Sprinkle reserved chocolate chips on top if using.
- Bake for 33 to 37 minutes, or until the edges are golden brown and a toothpick inserted comes out clean.
