Preparation Steps
  1. Preheat the oven to 350°F (175°C) and lightly spray a 9-inch pie dish with nonstick cooking spray.
  2. In a mixing bowl, combine vanilla wafer crumbs, brown sugar, and melted butter. Press mixture firmly into the prepared pie dish.
  3. Bake the crust for 10 minutes, then let it cool on a wire rack.
  4. While the crust is cooling, beat mascarpone cheese and confectioner’s sugar together until smooth. Mix in vanilla, cinnamon, and lemon zest.
  5. Whip heavy cream in a separate bowl until stiff peaks form, then fold into the mascarpone mixture.
  6. Gently fold in two-thirds of the mini chocolate chips into the mascarpone mixture.
  7. Spread the creamy filling into the cooled crust and sprinkle remaining chocolate chips on top.
  8. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
