Preparation Steps
- Preheat the oven to 350°F (175°C) and lightly spray a 9-inch pie dish with nonstick cooking spray.
- In a mixing bowl, combine vanilla wafer crumbs, brown sugar, and melted butter. Press mixture firmly into the prepared pie dish.
- Bake the crust for 10 minutes, then let it cool on a wire rack.
- While the crust is cooling, beat mascarpone cheese and confectioner’s sugar together until smooth. Mix in vanilla, cinnamon, and lemon zest.
- Whip heavy cream in a separate bowl until stiff peaks form, then fold into the mascarpone mixture.
- Gently fold in two-thirds of the mini chocolate chips into the mascarpone mixture.
- Spread the creamy filling into the cooled crust and sprinkle remaining chocolate chips on top.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
