Method
 

Step-by-Step Instructions
  1. Preheat your oven to 275°F (135°C) and grease your baking pan.
  2. In a small bowl, combine the mashed bananas with lemon juice and set aside.
  3. Whisk together flour, baking soda, and salt in another bowl and set aside.
  4. Cream softened butter and sugar until light and fluffy, about 4 to 5 minutes.
  5. Add eggs one by one, beating well after each addition and then add vanilla.
  6. Alternate adding the flour mixture and buttermilk until just combined.
  7. Gently fold in the banana mixture into the batter.
  8. Pour the batter into the prepared pan and bake for about 1 hour.
  9. Let the cake cool in the pan for 10 minutes, then transfer to the freezer for 45 minutes.
  10. Cream together butter and cream cheese, then add vanilla and sifted icing sugar.
  11. Once cooled, frost the cake and decorate as desired.
