Baking Steps
- Preheat your oven to 350°F (175°C). Prepare an 8×8-inch baking dish with nonstick spray.
- In a large mixing bowl, whisk together the vegetable oil, milk, granulated sugar, egg, and vanilla extract until smooth. Gradually add flour, baking powder, and salt, stirring gently.
- Fold in the blueberries carefully to avoid breaking them.
- Mix together the flour, cinnamon, and sugar for the topping, then cut in the butter until it resembles coarse crumbs.
- Pour half of the batter into the baking dish, sprinkle half of the topping, then add remaining batter and finish with the rest of the topping.
- Cover with foil and bake for 35 minutes. Remove foil and bake for an additional 5-10 minutes until a toothpick comes out clean.
- Cool in the pan for about 15 minutes, then slice and serve.
