  • 3 cups spinach can substitute with kale
For the Sauce
  • 1 shallot finely chopped
  • 2 cloves garlic minced
  • 1 pinch red chili flakes adjust to taste
  • ½ cup white wine or broth for non-alcoholic
  • 2 tablespoons tomato paste
  • 1 tablespoon Italian seasoning
  • 8 ounces regular block-style cream cheese avoid low-fat
For the Salmon
  • 6 ounces hot smoked salmon flaked
  • 1 tablespoon fresh dill optional
For Cooking
  • 2 tablespoons olive oil or butter
  • 2 tablespoons parsley for garnishing

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the chopped shallot and sauté until softened, about 1-2 minutes.
  2. Stir in minced garlic and red chili flakes, cooking for an additional minute.
  3. Pour in ½ cup of white wine and let it sizzle for 2-3 minutes until reduced.
  4. In a pot, bring salted water to a boil, then add 1 pound of gnocchi and cook until floating, about 2-3 minutes. Reserve ½ cup of cooking water.
  5. In the skillet, stir in tomato paste and Italian seasoning, gradually adding reserved pasta water until desired consistency.
  6. Fold in 3 cups of spinach, stirring until wilted, then mix in 8 ounces of softened cream cheese until melted.
  7. Gently fold in the cooked gnocchi and 6 ounces of flaked hot smoked salmon.
  8. Taste and adjust seasoning with salt and pepper, then serve immediately garnished with parsley and dill.
