- Preheat your oven to 425°F (220°C).
- Roll out your pizza crust on a floured surface to approximately 12 inches in diameter. Transfer to a pizza stone or baking sheet.
- In a small bowl, mix the sour cream and chopped chives. Spread this mixture evenly over the pizza crust.
- Sprinkle Mexican blend cheese over the sour cream mixture, covering well.
- Peel and dice potatoes, par-cook in boiling water for 5–7 minutes, then evenly distribute on top of the cheese.
- Sprinkle bacon bits evenly over the potatoes.
- Bake for 15–20 minutes, or until the cheese is bubbling and the crust turns golden brown.
- Remove from oven and drizzle additional sour cream before slicing. Serve hot.
