Ingredients
  

  • 1 pound ground beef
  • 12 ounces rotini pasta
  • 1 can 15 ounces sweet corn, drained
  • 1 packet 1 ounce ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Method
 

  1. Preheat your oven to 350°F.
  2. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  4. Stir in the ranch seasoning, garlic powder, onion powder, salt, and pepper. Cook for another 2 minutes.
  5. In a large mixing bowl, combine the cooked rotini, sweet corn, beef mixture, milk, sour cream, and 1 cup of cheddar cheese. Mix until well combined.
  6. Transfer the mixture to a greased 9x13-inch baking dish. Top with the remaining 1 cup of cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Let it cool for 5 minutes before serving. Garnish with fresh parsley if desired.
