Preparation Steps
  1. Cook the bacon in a skillet over medium-high heat until crispy, about 5–7 minutes. Remove and drain on paper towels, reserving some grease.
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Cut cauliflower into small florets, add to a mixing bowl, drizzle with reserved bacon grease, and sprinkle with garlic powder and black pepper. Toss to coat.
  4. Spread seasoned cauliflower on the baking sheet and roast for 18-22 minutes, flipping halfway through until tender and golden brown.
  5. Remove from the oven, sprinkle cheddar cheese over cauliflower, and bake for an additional 2-3 minutes until cheese melts.
  6. Top with crumbled bacon, green onions, and ranch dressing. Serve hot.
