Preparation Steps
- Preheat your oven to 300°F (150°C). Gather all your ingredients and equipment.
- In your food processor, pulse together the flour, icing sugar, salt, grapefruit zest, and thyme until well blended.
- Add the cold, cubed vegan butter to the dry mixture. Blend until it resembles coarse crumbs.
- Transfer the dough into your tart pan and press evenly into the bottom and sides to form the shape.
- Bake for 35-40 minutes, until the edges are golden and the center is set.
- After baking, let it cool for about 10 minutes and then cut into 16 equal pieces while still warm.
- Allow the cookies to cool completely in the pan for 20-30 minutes before removing.
- Whisk grapefruit juice into the sifted icing sugar until desired consistency is reached.
- Dip the cooled cookies into the icing and place on a wire rack to dry completely.
- Sprinkle fresh thyme or pearl sugar on top and let sit for a few minutes before serving or gifting.
