- Prepare Slow Cooker: Spray the inside of an 8-quart slow cooker with non-stick spray.
- Combine Ingredients: Peel and dice sweet potatoes into 1/2 inch cubes and place in the slow cooker. Add dark brown sugar, maple syrup, butter, pumpkin pie spice, and salt. Stir thoroughly.
- Cook: Cover the slow cooker and set to cook on high for 4 hours. Stir gently at the 3-hour mark.
- Add Marshmallows: 5 minutes before serving, sprinkle miniature marshmallows on top and cover to melt for 3-5 minutes.
- Serve: Stir gently to incorporate marshmallows and serve warm.
