Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9x13-inch baking dish with olive oil.
  3. In a large mixing bowl, combine chicken, zucchini, tomatoes, onion, garlic, olive oil, oregano, basil, paprika, salt, and pepper. Toss until well-coated.
  4. Transfer the mixture into the prepared baking dish, spreading it evenly.
  5. Sprinkle shredded mozzarella and grated Parmesan cheese over the top.
  6. Cover with aluminum foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 10 to 15 minutes until cheese is bubbly and golden brown.
  8. Let it cool for a few moments and garnish with fresh parsley before serving.
