Ingredients
  

  • 2 cups cooked rotisserie chicken shredded
  • 8 tostada shells
  • 1 cup refried beans
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado sliced
  • 1/2 cup crumbled queso fresco
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F. Place the tostada shells on a baking sheet and warm them in the oven for about 5 minutes until they are crispy.
  2. In a small bowl, mix the shredded rotisserie chicken with lime juice, chili powder, salt, and pepper.
  3. Spread about 2 tablespoons of refried beans on each tostada shell.
  4. Top the beans with a generous portion of the seasoned chicken.
  5. Add shredded lettuce, diced tomatoes, and avocado slices on top of the chicken.
  6. Sprinkle crumbled queso fresco over each tostada.
  7. Drizzle sour cream and salsa on top of the tostadas before serving.
  8. Serve immediately and enjoy!
