Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Carefully halve the spaghetti squash and remove the seeds. Cook until tender, about 30–40 minutes if roasting.
  3. In a large skillet over medium heat, cook the ground turkey for about 7 minutes until no pink remains.
  4. In a large mixing bowl, combine the spaghetti squash, cooked ground turkey, black beans, corn, and spices, adding 1 1/4 cups of cheese.
  5. Transfer the mixture to a 9x13 inch casserole dish and spread evenly.
  6. Sprinkle the reserved cheese over the top.
  7. Cover with aluminum foil and bake for about 45 minutes.
  8. Remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden brown.
  9. Let it rest for at least 10 minutes before serving.
