- Prepare your baking dish by lining an 8x8 inch baking pan with parchment paper.
- In a medium saucepan, combine white chocolate chips, sweetened condensed milk, and butter. Melt over low-medium heat, stirring for about 5-7 minutes until smooth.
- Remove from heat and stir in vanilla extract. Fold in crushed cookies and mini chocolate chips until well mixed.
- Pour fudge mixture into the baking dish, spreading it evenly. Sprinkle with remaining cookie crumbs and additional mini chocolate chips, pressing gently.
- Let the fudge cool at room temperature for about 1-2 hours. For best results, cover and set overnight.
- Once set, lift the fudge out using parchment paper and slice into 1-inch squares.
