For the Meatloaf
  • 1 pound Ground Beef lean varieties preferred
  • 1 cup Breadcrumbs or crushed crackers
  • 1 medium Onion chopped, or substitute with shallots
  • 2 cloves Garlic minced, or use garlic powder
  • 2 Eggs for binding, use a flax egg for vegan option
  • 1/2 cup Ketchup or BBQ sauce for smoky flavor
  • 2 tablespoons Worcestershire Sauce omit for gluten-free version
  • 1 teaspoon Dried Thyme or use fresh herbs
  • 1 teaspoon Dried Oregano or use fresh herbs
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper to taste
For the Mushroom Gravy
  • 8 ounces Fresh Mushrooms cremini or button mushrooms
  • 2 tablespoons Unsalted Butter or olive oil for dairy-free
  • 2 tablespoons All-Purpose Flour or corn starch for gluten-free
  • 2 cups Beef Broth or vegetable broth for lighter option
  • 1/2 cup Heavy Cream or non-dairy alternative

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large mixing bowl, combine all meatloaf ingredients and mix until well incorporated.
  3. Transfer the mixture to the prepared dish and shape into a loaf.
  4. Bake for 50-60 minutes until cooked through, or until the internal temperature reaches 160°F (71°C).
  5. In a skillet, melt butter and sauté mushrooms until golden brown.
  6. Add flour and stir for 2 minutes, then gradually whisk in broth and cream, thickening for 5-7 minutes.
  7. Once done, let the meatloaf rest for 10 minutes before slicing and serving with gravy.
