  • 2 pounds Boneless, skinless chicken breasts or thighs Cut into 1-inch pieces
  • 1 cup Ranch dressing Homemade is a delicious alternative
  • 4 cloves Fresh garlic Minced
  • 1 cup Parmesan cheese Grated
  • 8 pieces Skewers Use bamboo (soaked) or metal

Method
 

Directions
  1. Cut the chicken into uniform, 1-inch pieces.
  2. In a bowl, mix ranch dressing and minced garlic. Coat chicken pieces and marinate for 30 minutes.
  3. Preheat the grill to medium-high heat (around 400°F or 200°C).
  4. Skewer the marinated chicken pieces, leaving space between each.
  5. Grill the skewers for 10-15 minutes, turning to achieve grill marks and cook through.
  6. In the last minute, sprinkle grated parmesan cheese over the skewers.
  7. Remove skewers from the grill and serve hot.
