  • 2 cups cheddar cheese Colby Jack or Monterey Jack can be used
  • 1 small onion or use shallots for a milder flavor
For the Topping
  • 1 cup Ritz crackers can substitute with Panko breadcrumbs or crushed cornflakes

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked shredded chicken, cream cheese, sour cream, mayonnaise, cheddar cheese, and diced onion. Mix until smooth.
  3. Grease a 9x13-inch casserole dish and transfer the chicken mixture into the dish, spreading it evenly.
  4. Crush the Ritz crackers and sprinkle evenly over the chicken mixture.
  5. Bake for approximately 30 minutes until the top is golden brown and edges are bubbling.
  6. Let the casserole cool for 5-10 minutes before serving.
